LOVE KNOTS
Say something "romantic" for Valentine's Day!
- 1 Envelope of active dry yeast
- 3 Cups of all-purpose flour
- 1 Cup of butter, softened
- 3 Egg yolks
- 1 8-oz. carton of sour cream
- ½ Cup of sugar
- ½ Cup of finely chopped pecans
- ¾ Teaspoon of cinnamon
- 2 Cups of confectioner’s sugar
- 3 Tablespoons of milk
- 1 Teaspoon of vanilla extract
Combine yeast and flour. Add butter, beaten egg yolks and sour cream, mixing well. Shape dough into 2 balls. Wrap in plastic wrap and refrigerate overnight. Combine sugar, pecans and cinnamon. Set aside.
When ready to bake, unwrap dough balls and roll each into a rectangle (about 10” x 20”). Sprinkle dough with equal amounts of sugar-pecan-cinnamon mixture. Use hands to gently press mixture into dough. Cut dough into 1” strips on the 10” dimension, and loop each strip into a loose “knot”. Place on cookie sheet that has been sprayed with cooking spray or lined with parchment paper.
Bake at 350 degrees for 18 minutes or until lightly golden.
While “knots” are baking, combine confectioner’s sugar, milk and vanilla. Stir until smooth.
Remove “knots” from oven when done and allow to cool slightly. Transfer to cooling racks placed over waxed paper. Drizzle with icing while warm.
